Aged on the lees in tanks for 8 months
These naturally sweet wines are known as “passerillés”. The term refers to an age-old procedure whereby the bunches of grapes are dried before using them for winemaking. Following the harvest, fruit is placed on the schist at the foot of the vines. The influence of the sun, the black rock and the wind combine to produce top quality concentrated grapes.
On the finish, this wine expresses notes of pear and raspberry, with plenty of complexity. Its naturally concentrated acidity balances the sugars.
PERFECT FOOD PAIRING :
PLENITUDE goes extremely well with diced marinated tuna. Its pear and raspberry notes equally come to the fore with desserts.
Made in temperature-controlled stainless steel vats. Care was taken to prevent any form of oxidation. Alcoholic fermentation at 18° C. The fermentation is stopped by the addition of S02.
