TASTING :

Mahogany dress. It is an olfactory universe that opens with notes of prunes mixed with candied oranges. The spices arrive next, both sweet and soft.

PERFECT AGREEMENTS:

This wine, between fruits and spices, pairs boldly with a spicy pastilla for an exotic duo. Perfect ally of mature cheeses like an old Comté for example and more classically with a chocolate and dried fruit dessert.
Open one hour before and serve at 15°C.

PLOTS, TERROIR, CULTURE:

Decomposed schists and black marls, southern exposure.
Soil maintenance by plowing. The age of the Grenache vines, trained in goblet form, is over 40 years. The average yield is 18 hl/ha with planting densities of 3500 to 4000 vines/ha.

VINIFICATION :

Mutage on grains followed by a 30-day maceration to extract the material (aroma, polyphenols) contained in the berries and thus obtain a beautiful balanced structure between fruit, alcohol and sugar.

BREEDING AND BOTTLING:

Aged for one year in glass carboys placed outside, followed by 22 years in 350 hl oak tuns. This particularly long ageing process, the hallmark of Mas Amiel, allows the wine to acquire great maturity of aroma and structure.

Looks like prune juice. Smells like liquorice tea, smoked aniseed and linseeds. Amazingly smoky and meaty. Prunes. Staggering concentration – it feels as if it's been extracted from the core of the earth. There is so much here that it's impossible to do any justice to this wine in a quick tasting. This wine needs hours of time and attention. It's a towering sculpture of a wine. To grasp it, you'd need to sit with it, listen to it, give it space to tell its stories.

The 1999 Maury remains one of the domaine great successes, with its notes of coffee, olive, tapenade, a dry extract, a very digestible sweetness and a lot of dynamism in the mouth.
