NATURAL CINSAULT combines depth, complexity and freshness of fruit with ultra-fine textures, without filter, without artifice: au Naturel, AL NATURAL.

TASTING:

Bright red dress with garnet hues.
The first aromatic notes are very floral then they switch to fresh red fruits (gariguette).
The mouth is caressing. It evolves in finesse of texture with an extremely juicy side. The fresh and gourmet finish calls for great drinkability, the signature of Cinsault on schist.

PERFECT AGREEMENTS:

This pure Cinsault juice evolves in duo with a veal chop on the embers. On the fish side, red mullet harvesters just grilled.

PLOTS, TERROIR, CULTURE:

Schist terroir. Two plots of Cinsault on calc-schist, place called Las Fredes.
Vineyard managed 100% organically and biodynamically.

GRAPE VARIETIES:

100% Cinsault.

GRAPE HARVEST:

Manual, double manual sorting of the bunches on conveyor belt and vibrating table, destemming.

VINIFICATION:

In 50 hl stainless steel cuve.
Native yeasts from the region, without any oenological input or SO2. Very gentle vinification by infusion with total respect for the textures of the grape and the soil.

BREEDING AND BOTTLING:

breeding in concrete vats until bottling.
No addition of SO2 even before bottling.
