TASTING:

Dress with ruby reflections of a deep intensity. The nose is the signature of the very beautiful Grenache, notes of fresh fruit, grape, cherry and sloe with menthol evocations. On the palate we find the very present notes of cherries, a creamy, velvety texture balanced by a refreshing acidity. We bite into the natural Grenache on schist from Mas Amiel. Very digestible.

PERFECT AGREEMENTS:

This pure Grenache juice evolves in duo with a beef tataki. On the fish side with a beautiful scorpion fish or baked capon.

PLOTS, TERROIR, CULTURE:

Schist terroir. Several plots of Grenache black on calcoschist in the places called Cabirou and la Devèze.
Vineyard managed 100% organically and biodynamically.

GRAPE VARIETIES:

100% Grenache Noir.

GRAPE HARVEST:

Manual, double manual sorting of the bunches on conveyor belt and vibrating table, destemming.

VINIFICATION:

In 50 hl stainless steel cuve. Native yeasts from the region, without any oenological input or SO2. Very gentle vinification by infusion with total respect for the textures of the grape and the soil.

BREEDING AND BOTTLING:

breding in concrete cuve until bottling. No addition of SO2 even before bottling.

Smoky meaty on the nose. Wonderful black cherry and very direct, very intent. Blood orange and peony layering through crushed-stones minerality and liquorice root. The juiciness builds and builds, burying the tannins, and then the finish comes through and it feels like plums skins and leaves the lingering perfume of iris behind.
