TASTING:

PERFECT AGREEMENTS:

Le Plaisir Rose offers delicious, chic pairings with chorizo risotto, roasted langoustines and kumquat chutney, or classic ones with grilled red mullet or stuffed squid.

PLOTS, TERROIR, CULTURE:

Selection of hillsides on schist (Mas Amiel sector) with a significant presence of calcoschist in depth. The roots draw from the bedrock. North and South-East exposure depending on the plots. 100% organic and biodynamic viticulture. Soil maintenance by plowing and use of compost on the row. The age of the vines, trained in goblet, is 15 to 35 years. The average yield is 22 hl/ha with planting densities of 3500 to 4000 vines/ha.

GRAPE HARVEST:

Manual, during the first week of September. Double sorting
manual of clusters on belt and vibrating table.

VINIFICATION:

The grape clusters are placed manually in the press for moderate direct pressing in order to obtain the best juices.
After decanting overnight without enzyming, a 3-week fermentation begins below 18°C in stainless steel cuve.

BREEDING AND BOTTLING:

Breeding on fine lees with stirring until early bottling in February. This is done after very light filtration and minimal use of sulfur, preserving the tension, crispness, freshness and sincerity of the wine.
