TASTING:

The dress with blond highlights precedes a nose of cistus, grapefruit and schist heated by the summer sun. On the palate, the attack is fresh, balancing between minerality, grapefruit and mandarin. A very great freshness in the finish characterizes this wine. Biting and elegant.

PERFECT AGREEMENTS

Mineral and fruity, it goes perfectly with tuna tartare, pan-fried foie gras and also desserts such as fruit mousse, white peach soup or Roussillon red apricot tart.

PLOTS, TERROIR, CULTURE:

Vineyard cultivated 100% in Biodynamics. Selection of hillsides on schists (Mas Fredes sector) The soils are light and filtering. Presence of clays in depth. South-west exposure. Maintenance of the soils by plowing and use of compost on the row. The age of the vines, trained in goblet, is 60 to 75 years. The average yield is 18 hl/ha with planting densities of 4000 vines/ha.

GRAPE VARIETIES:

100% grenache gris.

GRAPE HARVEST:

Manual, during the last two weeks of September. Double manual sorting of the bunches on a conveyor belt and vibrating table, direct pressing without destemming. Harvest at 15% alcohol potential.

VINIFICATION:

Vinification in temperature-controlled stainless steel vats which take care to protect the wine from any oxidation. Alcoholic fermentation at 18°C, with mutage with alcohol on juice at mid-fermentation.

BREEDING AND BOTTLING:

VINTAGE WHITE is breeded in cuve on lees for 10 months, in a reducing environment (protected from air) to preserve the aromas of fresh fruit.
