TASTING:

It asserts its originality through an astonishing nose of black truffles, jam
of black fruits, caramel, peppers and spices. A vintage with sugars
penetrating, tangy, dazzling in intensity. The tannins of great salinity
harmoniously balance the finale.

PERFECT AGREEMENTS:

With seven-hour lamb or wild boar stew with citrus fruits.

PLOTS, TERROIR, CULTURE:

Vineyard cultivated 100% in Biodynamics. The Cabirou plot constitutes a real geological cirque of calcoschist. We find this gravel of schist and clay over 1.5 m deep before touching the bedrock.
Soil maintenance by crawler plowing. The age of the vines, trained in goblet form, is 94 years. The average yield is 10 to 15 hl/ha with planting densities of 3500 to 4000 vines/ha.

GRAPE VARIETIES:

100% Grenache from 1914. The venerable age of the century-old Grenache vines allows the roots to sink deep into the soil in order to draw the water and minerals necessary for their nutrition.

GRAPE HARVEST:

Manual, during the last week of September to the second of October. Double manual sorting of the bunches on a belt and vibrating table, destemming and light crushing.

VINIFICATION:

Vinification in thermoregulated wooden cuve. Alcoholic fermentation at 25°C, with mutage on grain at mid-fermentation followed by a maceration of 15 to 20 days. The mutage process consists of adding alcohol to the must during vinification in order to stop the fermentation. Asphyxiated, the yeasts cease their activity and the resulting wine retains a portion of untransformed natural sugar. The house touch? The exact moment of mutage and the dosage of alcohol: they determine the typicality and balance of the Vins Doux Naturels. In the end, an incomparable tension, freshness and sweetness.

BREEDING AND BOTTLING:

Breeding in a reducing environment in cuve and new barrels for 18 months of breeding.

DECANTER

What an incredible, lifted, spicy and floral nose, so complex and yet fresh. It’s not overly full-bodied, just has great concentration and resonance, with lovely acidity. Notes of black cherry and liquorice. It holds its alcohol well, with tremendous length. No sulphites added before bottling, fermented with natural yeast. From very old plots of vines, over 100 years old.

I got goosebumps from one sniff of the glass, and then goosebumps down to my toes when I tasted it. A pure nose, tingling fragrance, heady with peony perfume, with crushed alpine strawberries. It starts soaringly pure and soprano, but as the wine moves descant-like through the mouth, the alto and tenor notes build, deepen, bring plum cake and blackberry and cassis and spice. Another Mas Amiel heartbreaker.
