TASTING:

The deep purple dress opens a very expressive nose of burlat cherry, blackcurrant. Notes of roasting and sweet spices accompany a mouth in the same register. The fine and melted tannins and the finish retain a remarkable freshness.

PERFECT AGREEMENTS:

Chocolate in all its forms, but also duck with cherries and lamb tagines with prunes will be these perfect allies.

PLOTS, TERROIR, CULTURE:

Vineyard cultivated 100% in Biodynamics. On this plot of Mas Fredes, warm and ventilated, the south-east exposure ensures freshness and aromatic dynamics to the wine. It is made up of shist sheets. The light soil with significant stoniness is very filtering. A vein of red clay mixed with calcoschists constitutes here the true aromatic signature and the texture of VINTAGE RESERVE.

Soil maintenance by plowing and use of compost on the row. The age of the vines, trained in goblet form, is 50 to 60 years. The average yield is 18 hl/ha with planting densities of 3500 to 4000 vines/ha.

GRAPE VARIETIES:

100 % Grenache noir.

HARVEST:

Manual, during the last week of September and the second week of October. Double manual sorting of the bunches on a conveyor belt and vibrating table, destemming and light crushing. Harvest with 15 to 18% alcohol potential.

VINIFICATION:

Vinification in concrete cuve and thermoregulated stainless steel cuve. Alcoholic fermentation at 25°C, with mutage on grain at mid-fermentation followed by a maceration of 15 to 20 days.

BREEDING AND BOTTLING:

breeding in a reducing environment, in barrels of 2 or 3 wines for 12 months then in bottles.

GUARD TIME:

10 to 15 years old
