VOL DE NUIT comes from three plots planted with very old century-old Carignans. It is there, here, anchored and rooted deep in these schists that these old Carignans reveal their depth, aromatic and mineral length, ignoring any concentration. They transmit the mother rock.

TASTING:

Intense and complex nose, mineral, garrigue herbs, verbena, faded rose, blackcurrant fruit paste. On the palate, the wine is straight, fine, saline, finely spiced. It is marked by a dynamic breadth, and finishes on lines of great purity. Juicy and supple.

PERFECT AGREEMENTS:

Hare stew, royal style.

PLOTS, TERROIR, CULTURE:

Old vines, trained in goblet form for over 100 years, cultivated 100% biodynamically. The terroirs are made up of rankers (or mounds) of shale in sheets and micaschists. The light soils with significant stoniness are very filtering. The South East exposure is favorable to the preservation of a certain freshness at the end of the afternoon.
Soil maintenance by “Rambo”, an 8-year-old Comtois horse. Use of biodynamic preparations. The yield is approximately 19 hl/ha for these venerable Carignan vines.

GRAPE VARIETIES:

Carignan 100%, the "3 climates or plots": Ste Eugénie: 5280 feet of 1900, South East exposure, 143 m altitude. Mas Raphael: 3300 feet of 1925, South East exposure, 163 m altitude. Coll del Beou: 6500 feet of 1925, South East exposure, 330 m altitude.

GRAPE HARVEST:

Manual, double manual sorting of the bunches on a conveyor belt and vibrating table, 50% destemming.

VINIFICATION:

In 50 hl stainless steel cuve.

BREEDING AND BOTTLING:

breeding in ovoid and elliptical concrete cuve and 15 hl foudres until bottling.

GUARD TIME:

10 to 15 years old
