It is matured on fine lees with regular stirring
Bright fuchsia pink robe.
Burst of raspberry and wild strawberries on the nose. Surprising wild strawberry flavour on the palate, highlighted by nice acidity and a very round finish.
THE ROSE WINE:
The vats are bled to make this rosé.
Very tasty with grilled meat, red mullet or stuffed squid. Serve at 10–12° C.
The wine is the result of direct pressing, cold settling at 14°C and a period of fermentation in stainless steel vats. The wine’s alcoholic fermentation is carried out at a temperature of 16 - 18°C.
HARVEST :
Manual harvest. The fruit was de-stemmed. 6-hour vatting period, then the wine was run off into vats.
