While the technique of mutage is part of Mas Amiel's heritage, the vinification of vintages - which emphasize balance and freshness - is a creation of the estate.mutage, the sweet red and white wines are aged in vats, in reductive mode (protected from the air) to preserve fresh fruit aromas.
After a winter in tank, Vintages continue their slow maturation in bottle.
